TCM-approved Summer Dessert Recipes

Here are five TCM-approved summer dessert recipes that are not only delicious but also healthy and cooling for the body during the hot months:


Watermelon Sorbet

  • 4 cups of cubed watermelon

  • 1/4 cup of honey

  • Juice of one lime

Directions:

  1. Blend watermelon, honey, and lime juice in a blender until smooth.

  2. Pour the mixture into a large freezer-safe container and freeze for 4-6 hours.

  3. Use a fork to scrape the mixture every hour to prevent ice crystals from forming.

  4. Serve the sorbet in a chilled bowl and garnish with fresh mint leaves.


Mango Coconut Pudding

  • 1 cup of diced ripe mango

  • 1 can of coconut milk

  • 1/4 cup of honey

  • 1 tablespoon of agar-agar powder

  • 1/4 teaspoon of sea salt

Directions:

  1. Combine mango, coconut milk, honey, agar-agar powder, and sea salt in a saucepan and bring to a boil.

  2. Reduce the heat and simmer for 5-7 minutes until the mixture thickens.

  3. Pour the mixture into individual cups or ramekins and chill in the refrigerator for at least 2 hours.

  4. Serve the pudding topped with fresh berries or shredded coconut.



Peach and Plum Compote

  • 2 peaches, peeled and sliced

  • 2 plums, peeled and sliced

  • 2 tablespoons of honey

  • 1 tablespoon of lemon juice

  • 1/4 teaspoon of ground cinnamon

Directions:

  1. Combine peaches, plums, honey, lemon juice, and cinnamon in a saucepan and bring to a boil.

  2. Reduce the heat and simmer for 10-15 minutes until the fruit is tender and the sauce thickens.

  3. Serve the compote warm or chilled with a dollop of yogurt or whipped cream.


Strawberry Chia Seed Pudding

  • 1 cup of almond milk

  • 1/4 cup of chia seeds

  • 1/4 cup of honey

  • 1 teaspoon of vanilla extract

  • 1 cup of sliced strawberries

Directions:

  1. Combine almond milk, chia seeds, honey, and vanilla extract in a bowl and whisk well.

  2. Add sliced strawberries and stir to combine.

  3. Cover the bowl and refrigerate overnight.

  4. Serve the pudding topped with additional sliced strawberries or chopped nuts.


Coconut Matcha Ice Cream

  • 1 can of full-fat coconut milk

  • 1 tablespoon of matcha powder

  • 1/4 cup of honey

  • 1/4 teaspoon of sea salt

Directions:

  1. Combine coconut milk, matcha powder, honey, and sea salt in a blender and blend until smooth.

  2. Pour the mixture into a large freezer-safe container and freeze for 4-6 hours.

  3. Use a fork to scrape the mixture every hour to prevent ice crystals from forming.

  4. Serve the ice cream in a chilled bowl and garnish with toasted coconut flakes or fresh berries.
